Time for a recipe.
We all liked these potatoes so much that I made them twice in a weeks time. Sophia had ketchup on hers though so maybe her opinion doesn't count.
Hot German Potato Salad
Prep: 25 min; cook: 20 min
Makes 6 servings, about 2/3 cup each
4 medium potatoes (1 1/2 pounds)
3 slices of bacon, cut into 1 inch pieces
1 medium onion, chopped (1/2 cup)
1 tablespoon all purpose flour
1 tablespoon sugar
1/2 teaspoon salt
1/4 teaspoon celery seed
Dash of pepper
1/2 cup water
1/4 cup white vinegar
1. Prepare and cook potatoes, cool slightly, cut into 1/4 inch slices.
2. Cook bacon in a large skillet until crisp. Remove bacon from skillet and reserve. Cook onion in bacon fat over medium heat until tender.
Stir in flour, sugar, celery seeds, salt and pepper. Cook over low heat, stirring constantly, until mixture is bubbly.
3. Stir in water and vinegar. Heat to boiling, stirring constantly. Boil and stir one minute; remove from heat.
4. Stir in potatoes and bacon.
5. Serve warm.
I didn't take any pictures of this as it looks like mushy potatoes with bits of bacon in it. It's not a beautiful potluck dish, but it is delicious.
